Utilizing espadin agave cultivated on the Santiago family plantation—proudly holding U.S. Organic Certification—the agaves mature for a minimum of seven years before harvest. Here, the agave is roasted in traditional pit ovens over a span of several days, allowing for the development of deep, rich flavors.

The production process emphasizes community and sustainability, employing ethically sourced local materials and traditional methods. The agave is crushed using a stone tahona pulled by a beloved family horse, and fermentation occurs in pine wood tanks, adding a distinct local character to the mezcal.
